Read the ingredient list and you'll notice something unusual. There's no flour. California almonds make up 52% of this cookie, which makes it closer to badam barfi than a regular biscuit. Iranian pistachios go in next, with a pinch of cardamom, the same pairing that makes a good pista kulfi so hard to resist. It's held together with Priyal A2 Cow Bilona Butter and sweetened with desi khand. Dense, nutty, and fragrant the moment you open the jar. Lovely with coffee, and a very good choice for a festive gift box.
