About the cookie: Almond Choco Chunk Cookies

Some cookies are just sweet. This one actually tastes of chocolate. We use Callebaut 811, the Belgian dark couverture a lot of pastry chefs swear by, and we don't hold back on it. Chocolate makes up 30% of every cookie.

The base is where it gets personal. Instead of maida, the dough is made with khapli, an old heritage wheat, and it's bound together with Priyal A2 Cow Bilona Butter, churned from curd the traditional way. California almonds bring the crunch, and the dough is sweetened with desi khand.

Crisp at the edges, a little soft where the chocolate sits. Good with evening chai. Even better straight from the jar.
